Birthday Marshmallows

1Prepare a 9x13 inch baking pan by lining it with parchment paper and dusting with powdered sugar.

2In a mixing bowl, combine the gelatin and 1/2 cup of cold water (1 cup). Let it sit to bloom while you prepare the syrup.

3In a saucepan, mix the remaining 1/2 cup of cold water (1 cup), corn syrup, granulated sugar (1½ cups), and salt (¼ teaspoon) over medium heat. Stir until the sugar dissolves, then insert a candy thermometer and bring the mixture to 240°F (115°C).

4Once the syrup reaches the correct temperature, remove it from heat immediately.

5Begin mixing the gelatin mixture on low speed, gradually pouring in the hot syrup. Be cautious as the syrup is very hot.

6Increase the speed to high and whip until the mixture becomes thick and fluffy, approximately 10-15 minutes.

7Add vanilla extract (2 teaspoons) and any additional flavor extracts you desire, and mix until well combined.

8Optionally, divide the mixture into separate bowls and tint each with food coloring.

9Transfer the marshmallow mixture to a piping bag fitted with a round tip.

10Pipe the mixture into the prepared baking pan, creating an even layer. Smooth the top with a spatula.

11If desired, sprinkle the top with colored sugar, sprinkles, or edible glitter for a festive touch.

12Allow the marshmallows to set at room temperature for at least 4 hours or overnight.
