Decadent Chocolate Dream Cake

1Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans with butter and cocoa powder.

2In a large mixing bowl, sift together the flour, cocoa powder, baking powder (1½ teaspoons), baking soda (1½ teaspoons), instant coffee powder (1 teaspoon), and salt (½ teaspoon).

3In a separate bowl, mix the buttermilk (1 cup), hot water (1 cup), vegetable oil (¾ cup), sugar, eggs (3 large), and vanilla extract (2 teaspoons) until well combined.

4Gradually add the wet ingredients to the dry ingredients, stirring until smooth and well blended.

5Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

7To make the ganache, heat the heavy cream (1 cup) in a saucepan over medium heat until it simmers.

8Place the chocolate chips in a heatproof bowl and pour the hot cream over the chocolate. Let it sit for 2-3 minutes, then stir until smooth and glossy.

9Let the ganache cool for 15-20 minutes to thicken slightly.

10Spread a layer of ganache on top of one cake layer, then place the second cake layer on top and cover the entire cake with the remaining ganache.

11Chill the cake in the refrigerator for at least 1 hour before serving to set the ganache.
