Indo-China Egg Fried Rice

1In a pan, heat 1 tablespoon of oil (2 tablespoons) and scramble the eggs (4). Set aside once cooked.

2In the same pan, add the remaining oil (2 tablespoons) and sauté the garlic (2 cloves), ginger (1 tablespoon), and green chilies (2).

3Add the chopped onion (1) and cook until translucent.

4Include the mixed vegetables (1 cup) and stir-fry for a few minutes until they are slightly tender.

5Mix in the cooked rice and combine well with the vegetables.

6Add soy sauce (2 tablespoons), chili sauce (1 tablespoon), vinegar (1 teaspoon), sugar (½ teaspoon), black pepper (½ teaspoon), and salt to taste. Stir to coat the rice evenly with the sauce.

7Create a well in the center of the rice mixture and pour the scrambled eggs (4). Mix gently to distribute the eggs (4) throughout the rice.

8Garnish with chopped spring onions (3) and serve hot.
