Spicy Coconut Egg Curry

1Heat vegetable oil (1 tablespoon) in a pan over medium heat and sauté the chopped onions until they turn translucent and light golden brown.

2Add the minced garlic (3 cloves) and grated ginger to the pan. Cook for a minute until fragrant.

3Stir in the chopped tomatoes (2) and cook until they soften and break down to form a thick paste.

7Cover the pan and let the eggs simmer in the curry for about 10-15 minutes on low heat, allowing them to absorb the flavors of the curry sauce.

8Once the eggs have soaked up the flavors, garnish the Egg Curry with fresh cilantro leaves for a burst of freshness and aroma.
