Thermomix Raspberry Schnitzel Sauce

1Place the fresh raspberries (200 g), granulated sugar (75 g), and water (50 ml) into the Thermomix bowl.

2Secure the lid and set the Thermomix to 10 minutes at 100°C on speed 2.

3After cooking for 10 minutes, add the balsamic vinegar (2 tbsp), lemon juice (1 tbsp), salt (1 pinch), and black pepper (1 pinch) to the mixture.

4Blend the mixture on speed 5 for 10 seconds or until smooth.

5Taste the sauce and adjust seasoning if necessary.

6Strain the raspberry sauce through a fine-mesh sieve to remove seeds for a smoother texture if desired.

7Serve the raspberry sauce warm or at room temperature over crispy schnitzels.
