Christmas Stew

1In a large pot, heat olive oil (2 tablespoons) over medium heat.

2Add the beef stew meat (2 lbs) and brown on all sides.

3Add the chopped onion (1) and minced garlic (3 cloves), sauté until fragrant.

4Stir in the carrots (4) and potatoes (4), cook for a few minutes.

5Pour in the beef broth (2 cups) and red wine (1 cup), bring to a simmer.

6Add the diced tomatoes (1 can), thyme (1 teaspoon), rosemary (1 teaspoon), paprika (1 teaspoon), salt, and pepper.

7Cover and let the stew simmer on low heat for 1.5 to 2 hours, stirring occasionally.

8Taste and adjust seasoning if needed.

9Serve the Christmas Stew hot, garnished with fresh parsley.
