Indian Birthday Cake

1Preheat the oven to 350°F (180°C) and grease a cake pan with oil and flour.

2In a mixing bowl, combine the flour, sugar (1 cup), baking powder (1 teaspoon), baking soda (½ teaspoon), cardamom powder (½ teaspoon), and saffron strands (¼ teaspoon).

3Add the yogurt (1 cup), vegetable oil (½ cup), and milk (¼ cup) to the dry ingredients and mix well until smooth.

4Fold in the chopped nuts (¼ cup), raisins (¼ cup), and dried fruits (¼ cup) into the batter.

5Pour the batter into the prepared cake pan and spread it evenly.

6Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

7Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes.

8Transfer the cake to a wire rack to cool completely before frosting.

9For the frosting, mix powdered sugar (1 cup) with a little milk (¼ cup) and vanilla extract (1 teaspoon) to make a smooth glaze.

10Drizzle the glaze over the cooled cake and decorate with additional nuts and dried fruits (¼ cup) if desired.
