Cheesy Beef and Chicken Casserole

1Preheat the oven to 375°F (190°C).

2In a large skillet, heat some oil over medium heat.

3Add minced garlic (2 cloves) and diced onion (1) to the skillet. Cook until the onion (1) is translucent and the garlic is fragrant.

4Add the chicken (1 pound) to the skillet and cook until it's no longer pink.

5Pour in the beef broth (1 pound) and bring it to a simmer. Let it cook for 10 minutes.

6Stir in the rice (1 cup), soy sauce (2 tablespoons), salt, and pepper. Cook until the rice (1 cup) is tender and the liquid is absorbed.

7In a separate bowl, whisk together the eggs (2) and milk (1 cup).

8Grease a baking dish with butter (¼ cup) and layer the tater tots (2 cups) at the bottom.

9Pour the chicken (1 pound) and rice (1 cup) mixture over the tater tots (2 cups) in the baking dish.

10Pour the egg and milk (1 cup) mixture over the chicken (1 pound) and rice (1 cup).

11Sprinkle the shredded cheddar cheese (1 cup) on top of the casserole.

12Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
