Cheesy Tomato Galette

1Preheat the oven to 375°F (190°C).

2In a mixing bowl, combine the flour (1 cup) and a pinch of salt. Add the cold water (¼ cup) gradually and mix until a dough forms.

3Roll out the dough on a floured surface to form a circle about 12 inches in diameter.

4Transfer the dough to a baking sheet lined with parchment paper.

5Sprinkle half of the shredded cheese (1 cup) over the dough, leaving a border of about 2 inches.

6Arrange the sliced tomatoes (2) on top of the cheese layer.

7Sprinkle the remaining cheese over the tomatoes (2).

8Season the galette with the assorted spices according to your preference.

9Fold the edges of the dough over the filling, creating a rustic border.

10Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the cheese is melted and bubbly.

11Remove from the oven and let it cool slightly before slicing and serving.
