Cheesy Vegetable Bake

1Preheat the oven to 350°F (180°C).

2In a saucepan, melt the butter (½ cup) over low heat.

3Add the flour (2 cups) to the melted butter (½ cup) and stir continuously until it forms a smooth paste (roux).

4Slowly pour in the milk (2 cups) while stirring to create a creamy sauce.

5In a separate pan, sauté the sliced carrots, beetroot, and raw mango (1) in oil (¼ cup) until slightly tender.

6Add the sautéed vegetables to the creamy sauce and mix well.

7Pour the vegetable and sauce mixture into a baking dish.

8Sprinkle the cheese (1 cup) evenly over the top of the mixture.

9Bake in the preheated oven for 25-30 minutes or until the cheese (1 cup) is melted and bubbly, and the vegetables are cooked through.
