Mexican Mince Curry with Thermomix

1Place the onion (1 large) and garlic (2 cloves) in the Thermomix bowl. Chop for 5 seconds on speed 5.

2Add the olive oil (1 tablespoon) to the bowl. Sauté for 3 minutes at 100°C on speed 1.

3Add the beef mince (500 g) to the bowl. Cook for 5 minutes at 100°C on reverse speed soft, or until browned.

4Add the red and green bell (1) peppers. Chop for 5 seconds on speed 4.

5Add the diced tomatoes, kidney beans, tomato paste (2 tablespoons), ground cumin (2 teaspoons), ground coriander (2 teaspoons), smoked paprika (1 teaspoon), chili powder (1 teaspoon), dried oregano (1 teaspoon), salt (1 teaspoon), black pepper (½ teaspoon), and beef broth (½ cup). Mix for 10 seconds on reverse speed 3.

6Cook for 20 minutes at 100°C on reverse speed soft.

7Add the lime juice and fresh cilantro (¼ cup). Mix for 5 seconds on reverse speed 2.

8Serve the Mexican mince curry over cooked rice.
