Cheesy Chicken Casserole with Mashed Potatoes

1Preheat the oven to 350°F (175°C).

2In a large mixing bowl, combine the cooked shredded chicken, cream of chicken soup (1 can), sharp cheddar cheese, (1 cup) mozzarella cheese, (1 cup) colby jack cheese, (1 cup) onion powder (1 teaspoon), garlic powder (1 teaspoon), salt, and pepper. Mix well.

3Spread the mashed potatoes (4 cups) evenly in the bottom of a baking dish.

4Pour the chicken and cheese mixture over the mashed potatoes (4 cups), spreading it out evenly.

5Sprinkle the crushed Cheez-It crackers (1 cup) on top of the chicken mixture.

6Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

7Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
