Christmas Fishes Feast

1Preheat the oven to 375°F (190°C).

2Prepare the salmon by cleaning and gutting it. Score the skin of the salmon with diagonal cuts.

3Season the salmon with salt, pepper, and a drizzle of olive oil (1 cup). Stuff the cavity with lemon (1) slices and fresh dill (1 bunch).

4Place the salmon on a baking tray lined with foil and bake for 30-40 minutes, or until cooked through.

5In a large skillet, heat olive oil (1 cup) over medium heat. Add minced garlic (4 cloves) and diced red onion (1). Cook until softened and fragrant.

6Add the shrimp (1 pound) and scallops (1 pound) to the skillet. Season with paprika (1 teaspoon), cayenne pepper (1 teaspoon), oregano, thyme, black pepper (1 teaspoon), and sugar (1 teaspoon). Cook until seafood is cooked through.

7Deglaze the skillet with white wine (1 cup). Add cherry tomatoes (1 cup) and vegetable broth (1 cup). Simmer for 5-7 minutes.

8In a small bowl, mix cornstarch (1 teaspoon) with water to create a slurry. Stir the slurry into the skillet to thicken the sauce.

9Stir in heavy cream (1 cup) and grated Parmesan cheese (1 cup). Simmer until the sauce is creamy and thickened.

10Serve the baked salmon with the seafood sauce and crusty bread on the side. Garnish with fresh parsley (1 bunch) before serving.
