Crispy Fried Chicken

1In a bowl, mix the flour, paprika (1 tsp), garlic powder (1 tsp), onion powder (1 tsp), and cayenne pepper (½ tsp).

2In another bowl, whisk the eggs (2) and milk (¼ cup) together.

3Dip each chicken piece in the flour mixture, then in the egg mixture, and back in the flour mixture for a double coating.

4Heat oil in a deep fryer or large pot to 350°F (180°C).

5Carefully place the coated chicken pieces (2 lbs) in the hot oil, ensuring not to overcrowd the fryer.

6Fry the chicken for about 15-20 minutes or until golden brown and cooked through, turning occasionally for even cooking.

7Remove the fried chicken from the oil and place on a wire rack to drain excess oil.
