Festive Holiday Stir-Fry

1.In a bowl, combine the sliced chicken with soy sauce, oyster sauce, hoisin sauce, sesame oil, and cornstarch. Mix well and let it marinate for 15-20 minutes.

2.Heat vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.

3.In the same skillet, add more oil if needed. Stir-fry the garlic and ginger until fragrant.

4.Add the bell peppers, broccoli, snow peas, baby corn, carrots, and water chestnuts. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

5.Pour in the chicken broth, rice vinegar, honey, and red pepper flakes. Stir well to combine.

6.Return the cooked chicken to the skillet and toss everything together. Cook for another 2-3 minutes.

7.Add the toasted cashews and stir to mix.

8.Serve the festive holiday stir-fry over cooked rice.

9.Garnish with chopped green onions before serving.
