Christmas Watalappan

1Preheat the oven to 350°F (180°C).

2In a saucepan, heat the coconut milk (1 cup) and palm sugar (1 cup) over low heat until the sugar dissolves. Remove from heat and let it cool slightly.

3In a mixing bowl, beat the eggs (4) until well combined.

4Slowly pour the warm coconut milk (1 cup) mixture into the beaten eggs (4) while continuously whisking to avoid curdling.

5Add cardamom powder (½ tsp), nutmeg powder (¼ tsp), and cinnamon powder (¼ tsp) to the mixture and stir well.

6Strain the mixture to remove any lumps and pour it into a baking dish.

7Sprinkle cashew nuts (¼ cup) and raisins (¼ cup) on top of the mixture in the baking dish.

8Place the baking dish in a larger baking pan filled with water to create a water bath.

9Bake in the preheated oven for about 45-50 minutes or until the watalappan is set and a toothpick inserted comes out clean.

10Remove from the oven and let it cool before serving.

11Serve the Christmas watalappan warm or chilled, garnished with additional cashew nuts (¼ cup) and raisins (¼ cup) if desired.
