Cheesy Tomato And Creamy Pumpkin Lasagna

1.Preheat the oven to 375°F (190°C).

2.Cook the lasagna noodles according to package instructions, then drain and set aside.

3.In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.

4.Add the diced tomatoes, dried oregano, dried basil, nutmeg, and red pepper flakes to the skillet. Cook for another 5 minutes, stirring occasionally.

5.In a separate saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.

Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and Parmesan cheese on top.

9.Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
