African-Inspired Fried Eggs in Palm Oil

1Heat palm oil (2 tbsp) in a skillet over medium heat until hot but not smoking.

2Crack the eggs (2) into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.

3Carefully spoon the hot palm oil (2 tbsp) over the eggs (2) to cook the yolks slightly, about 1 minute.

4Remove the eggs (2) from the skillet and serve hot.
