Fourth of July Meat Pie Bites

1Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

2In a skillet, cook the seasoned ground meat until browned. Add the diced carrots (½ cup), potatoes, onions, bell peppers, and peas (½ cup). Cook until the vegetables are tender, then add the beef or chicken broth (½ cup). Simmer until the mixture thickens and the flavors meld together.

3Roll out the pie crusts and use a cookie cutter to cut out small circles.

4Divide the meat and vegetable mixture evenly among half of the pie crust circles.

7Divide the egg (1) wash into two portions. Add red food coloring to one portion and blue food coloring to the other.

8Brush the colored egg (1) wash over the mini meat pies to create a patriotic design.

9Bake the meat pie bites in the preheated oven for 15-20 minutes or until golden brown and the crust is crispy.

10Let the meat pie bites cool slightly before serving. Top with a dollop of sour cream and chopped chives if desired.
