Cheesy Pork Stuffed Potatoes

1Preheat the oven to 400°F (200°C).

2Wash the potatoes (4 large) thoroughly and prick them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until they are tender when pierced with a fork.

3In a skillet, cook the minced pork (½ lb) over medium heat until browned and cooked through. Add the minced garlic (4 cloves) and cook for another minute until fragrant.

4Add the paprika (1 tsp), cayenne pepper (½ tsp), dried thyme (½ tsp), dried oregano (½ tsp), and garlic powder (½ tsp) to the pork (½ lb) mixture. Stir well to combine and cook for an additional 2-3 minutes.

5Remove the cooked potatoes (4 large) from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer inside the skin.

6Mash the scooped-out potato flesh and mix it with the cooked pork (½ lb) mixture. Stir in half of the shredded cheese (1 cup).

7Stuff the potato skins with the cheesy pork (½ lb) mixture and top with the remaining shredded cheese (1 cup).

8Place the stuffed potatoes (4 large) back in the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.

9Serve the cheesy pork (½ lb) stuffed potatoes (4 large) hot and enjoy!
