Birthday Dorayaki Cakes

1In a mixing bowl, combine the all-purpose flour (1 cup), sugar (½ cup), and baking powder (½ teaspoon).

2In a separate bowl, whisk the eggs (2 large), milk (¼ cup), honey (1 tablespoon), and vanilla extract (1 teaspoon) until well combined.

3Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

4Heat a non-stick pan over medium heat and lightly grease with oil.

5Pour a small amount of batter onto the pan to form small pancakes, cooking for about 2 minutes on each side until golden brown.

6Repeat the process to make multiple dorayaki pancakes.

7Once the pancakes are cool, spread red bean paste (½ cup) on one pancake and top with whipped cream. Place another pancake on top to create a sandwich.

8Decorate the top with fresh fruits and dust with powdered sugar (½ cup) before serving.
