Christmas Dorayaki Cakes

1In a mixing bowl, whisk together the eggs (2) and sugar (½ cup) until light and fluffy.

2Add the milk (¼ cup) and vanilla extract (¼ tsp) to the egg mixture and mix well.

3Sift in the flour and baking powder (½ tsp), and gently fold until just combined.

4Heat a non-stick pan over medium heat and lightly grease with oil.

5Pour a small amount of batter onto the pan to form small pancakes, cook until bubbles form on the surface, then flip and cook the other side until golden brown.

6Repeat the process with the remaining batter to make several small pancakes.

7Once the pancakes are cool, spread a layer of red bean paste (¼ cup) on half of them and top with whipped cream (¼ cup).

8Sandwich the pancakes together to form dorayaki cakes.

9Dust the cakes with powdered sugar (½ cup) and decorate with Christmas-themed sprinkles before serving.
