Secret Banana Cupcake

1Preheat the oven to 350°F (180°C) and line a cupcake pan with cupcake liners.

2In a mixing bowl, mash the ripe bananas (2) until smooth.

3In a separate bowl, whisk together the flour, baking powder (1 teaspoon), baking soda (½ teaspoon), cinnamon (½ teaspoon), nutmeg (¼ teaspoon), and salt (¼ teaspoon).

4In another bowl, cream the softened butter and sugar until light and fluffy using a hand mixer or stand mixer.

5Add the eggs (2 large) one at a time, mixing well after each addition. Stir in the vanilla extract (1 teaspoon).

6Gradually add the dry flour mixture to the wet ingredients, alternating with buttermilk (½ cup), and mix until just combined.

7Fold in the mashed bananas until evenly distributed in the batter.

8Fill each cupcake liner about 2/3 full with the batter.

9Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

10Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

11Once cooled, you can frost the cupcakes with your favorite frosting or enjoy them plain!
