Fresh Lemon Cookies

1Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2In a medium bowl, whisk together the flour, baking soda (½ teaspoon), and baking powder (½ teaspoon).

3In a separate large bowl, cream together the softened butter and granulated sugar (1 cup) until light and fluffy.

4Beat in the egg (1), fresh lemon zest (1 tablespoon), fresh lemon juice (2 tablespoons), and vanilla extract (1 teaspoon) until well combined.

5Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

6Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them apart.

7Flatten each ball slightly with the back of a spoon or your fingers.

8Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden brown.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
