Crumble Cookie

1Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2In a mixing bowl, cream together the softened butter and granulated sugar (1 cup) until light and fluffy.

3Add the vanilla extract (1 tsp) and mix until well combined.

4In a separate bowl, whisk together the flour, baking powder (½ tsp), and salt (¼ tsp).

5Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.

6Divide the dough in half. Press one half into the bottom of the prepared baking sheet to form the base of the cookie crumble.

7Spread the jam evenly over the dough base.

8Crumble the remaining dough on top of the jam layer.

9Sprinkle the chopped nuts and shredded coconut over the crumbled dough (if using).

10Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the edges are slightly crisp.

11Allow the cookie crumble to cool completely before cutting into squares or bars.
