Cheesy Beef and Potato Casserole

1Preheat the oven to 375°F (190°C).

2Peel and slice the potatoes (4) into thin rounds.

3Chop the tomatoes (2), garlic (3 cloves), green onion (1), regular onion (1), and cabbage (½ head) into small pieces.

4In a skillet, cook the grounded beef (1 lb) until browned. Season with salt and pepper to taste.

5Add the chopped tomatoes (2), garlic (3 cloves), green onion (1), regular onion (1), and cabbage (½ head) to the skillet with the beef. Cook until the vegetables are tender.

6In a bowl, beat the eggs (2) and mix in the shredded cheese (1 cup).

7Layer half of the sliced potatoes (4) in a baking dish. Top with the beef and vegetable mixture.

8Pour the egg and cheese mixture over the beef and vegetables.

9Layer the remaining sliced potatoes (4) on top of the casserole.

10Cover the baking dish with foil and bake for 45 minutes.

11Remove the foil and bake for an additional 15 minutes until the potatoes (4) are golden brown and crispy.

12Serve hot and enjoy!
