Nutty Oat Bread with Peanut Butter Drizzle

1In a small bowl, mix the yeast with warm water (¼ cup) and let it sit for 5 minutes until frothy.

2In a large mixing bowl, combine the bread flour (2 cups), oats (1 cup), peanut butter (½ cup), honey (¼ cup), mixed nuts, curd (1 cup), warm milk (¼ cup), and the yeast mixture.

3Knead the dough for about 10 minutes until smooth and elastic. Add more flour if needed to prevent sticking.

4Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour or until doubled in size.

5Preheat the oven to 350°F (180°C) and grease a loaf pan.

6Punch down the dough and shape it into a loaf. Place it in the prepared loaf pan.

7Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped on the bottom.

8Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

9In a small saucepan, heat the remaining peanut butter (½ cup) with a little honey (¼ cup) until smooth and drizzle it over the cooled bread before serving.
