Fluffy Scrambled Eggs

1Crack the eggs (2) into a bowl and whisk until well combined.

2Add the milk (¼ cup) and black pepper (¼ teaspoon) to the eggs (2) and whisk again.

3Melt the butter (1 tablespoon) in a non-stick skillet over medium heat.

4Pour the egg mixture into the skillet.

5Using a spatula, gently stir the eggs (2) as they cook, pushing them from the edges towards the center.

6Continue to cook and stir until the eggs (2) are just set but still moist.

7If using cheese, sprinkle it over the eggs (2) and let it melt for a minute.

8Remove the skillet from heat and transfer the scrambled eggs (2) to a plate.

9Garnish with chopped chives if desired.
