Crispy Yukon Gold Potato Pave Duck Fat Fries

1Preheat the oven to 375°F (190°C).

2Peel the Yukon Gold potatoes (2 lbs) and slice them thinly using a mandoline slicer.

3In a small saucepan, melt the duck fat (1 cup) over low heat until it becomes liquid.

4Add thyme (1 tsp), rosemary (1 tsp), garlic powder (1 tsp), paprika (½ tsp), cayenne pepper (½ tsp), onion powder (½ tsp), and black pepper (½ tsp) to the melted duck fat (1 cup). Stir well to combine the spices with the fat.

5Brush a baking dish with a thin layer of the seasoned duck fat (1 cup) mixture.

6Arrange a layer of sliced potatoes in the bottom of the baking dish, slightly overlapping each other.

7Brush the layer of potatoes with the seasoned duck fat (1 cup) mixture.

8Repeat the layering process with the remaining potatoes and seasoned duck fat (1 cup) mixture until all potatoes are used.

9Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

10Remove the foil and bake for an additional 15-20 minutes or until the potatoes are golden brown and crispy on the edges.

11Remove from the oven and let it cool slightly before serving.

12Serve the crispy Yukon Gold (2 lbs) potato pave duck fat (1 cup) fries hot as a delicious side dish or snack.
