Christmas Potato Balls

1Peel and boil the potatoes (2 lbs) until they are soft. Mash the potatoes (2 lbs) in a large bowl.

2Add breadcrumbs (1 cup), Parmesan cheese, parsley, chives, eggs (2), garlic powder (½ tsp), onion powder (½ tsp), paprika (½ tsp), and black pepper (½ tsp) to the mashed potatoes (2 lbs). Mix well to combine all ingredients thoroughly.

3Shape the potato mixture into small balls, about the size of a golf ball.

4Roll each ball in flour (½ cup) to coat evenly.

5Heat vegetable oil (¼ cup) in a pan over medium heat.

6Fry the potato balls in batches until they are golden brown and crispy on all sides. Remove and drain on paper towels.

7Serve the Christmas potato balls hot with a side of cranberry sauce (½ cup) for dipping or drizzling over the top.
