Spicy Pav Bhaji

1Heat oil (2 tbsp) in a pan and add cumin seeds (1 tsp). Let them splutter.

2Add chopped onions and sauté until translucent.

3Add green chili (1) and grated ginger, sauté for a minute.

4Add chopped tomatoes and cook until they turn soft and mushy.

5Add turmeric powder (1 tsp), red chili powder (1 tsp), coriander powder (½ tsp), cumin powder (½ tsp), and salt. Mix well.

6Add the mashed potatoes (4 medium) and mix everything together, mashing the mixture slightly.

7Add water as needed to achieve a thick consistency. Let it simmer for 10-15 minutes.

8Sprinkle garam masala (1 tsp) and mix well. Cook for another 2-3 minutes.

9Toast the Pav buns (6) on a griddle with a little butter until golden brown.

10Garnish the Pav Bhaji with fresh coriander leaves and serve hot with the toasted Pav buns (6).
