Creamy Pasta with Roasted Potatoes and Caramelized Onions

1Preheat the oven to 400°F (200°C).

2Peel and dice the potatoes (2 large) into small cubes.

3Toss the diced potatoes (2 large) with olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 25-30 minutes or until golden brown and crispy, stirring halfway through.

4Cook the pasta (8 oz) according to package instructions until al dente. Drain and set aside.

5In a skillet, heat olive oil over medium heat. Add sliced onions (2) and cook until caramelized, about 15-20 minutes, stirring occasionally.

6Add minced garlic (2 cloves), red pepper flakes (¼ tsp), thyme, oregano, black pepper (¼ tsp), and paprika (¼ tsp) to the skillet. Cook for another 2 minutes.

7Pour in the heavy cream (1 cup) and bring to a simmer. Stir in the grated Parmesan cheese (½ cup) until melted and creamy.

8Add the cooked pasta (8 oz) to the skillet and toss to coat in the creamy sauce.

9Serve the creamy pasta (8 oz) topped with roasted potatoes (2 large) and caramelized onions (2).

10Garnish with fresh parsley before serving.
