Chewy Cookies with Crunchy Outside

1Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

2In a medium bowl, whisk together the flour, baking soda (1 teaspoon), baking powder (½ teaspoon), and salt (½ teaspoon).

3In a separate large bowl, mix the vegetable oil (1 cup), brown sugar (1 cup), granulated sugar (½ cup), and vanilla extract (2 teaspoons) until well combined.

4Add the dry ingredients to the wet ingredients and mix until a dough forms.

5Fold in the unsweetened applesauce (¼ cup) to the dough until evenly distributed.

6Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving space between each cookie.

7Using a fork, gently press down on each cookie ball to flatten slightly and create a crisscross pattern.

8Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

9Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
