Christmas Molee

1Heat coconut oil (2 tbsp) in a pan over medium heat.

2Add sliced onions, green chilies (2), ginger (1 inch), and garlic (4 cloves). Saute until onions turn translucent.

3Add turmeric powder (½ tsp), chili powder (1 tsp), coriander powder (½ tsp), and garam masala (½ tsp). Mix well and cook for a minute.

4Add the chicken pieces and saute until they are browned on all sides.

5Pour in the thin coconut milk (½ cup) and bring to a simmer. Cover and cook until the chicken is almost cooked through.

6Add the chopped tomato (1) and curry leaves (1 sprig). Cook for another 5 minutes.

7Pour in the thick coconut milk (1 cup) and simmer for a few more minutes until the chicken is cooked completely and the gravy thickens.

8Season with salt according to taste.

9Serve hot with steamed rice or appam.
