Cheddar and Bacon Sausage Skillet

1Heat olive oil (1 tablespoon) in a skillet over medium heat.

2Add the cheddar and bacon sausages (4) to the skillet and cook until browned on all sides, about 8-10 minutes.

3Remove the sausages from the skillet and set aside.

4In the same skillet, add the diced onion (1 small) and cook until translucent, about 3-4 minutes.

5Add the minced garlic (2 cloves) and cook for another 1-2 minutes.

6Stir in the sliced bell pepper (1) and cook until slightly softened, about 5 minutes.

7Add the paprika (1 teaspoon), dried thyme (½ teaspoon), dried oregano (½ teaspoon), garlic powder (½ teaspoon), cayenne pepper (¼ teaspoon), salt, and pepper. Stir to combine.

8Pour in the diced tomatoes (1 can) and chicken broth (½ cup). Bring to a simmer and let it cook for 10 minutes.

9Slice the cooked sausages and return them to the skillet. Cook for an additional 5 minutes.

10Serve the cheddar and bacon (4) sausage skillet over cooked rice (2 cups).

11Garnish with fresh parsley before serving.
