Creamy Chicken and Potato Rice

1Cook the rice (1 cup) according to package instructions.

2Cut the chicken breasts (2) into bite-sized pieces and season with salt and pepper.

3In a large skillet, heat oil over medium heat and cook the chicken until browned and cooked through, then set aside.

4Peel and dice the potatoes (2) and onion (1).
