Savory Egg-in-a-Hole Toast

1Using a round cookie cutter or a glass, cut a hole in the center of each slice of bread.

2Melt 1 tablespoon of butter (2 tablespoons) in a non-stick skillet over medium heat.

3Place the bread slices in the skillet and toast until lightly golden on one side, about 2 minutes.

4Flip the bread slices over and add the remaining tablespoon of butter (2 tablespoons) to the skillet.

5Crack an egg into each hole in the bread slices.

6Sprinkle the shredded cheese (¼ cup) around the edges of the bread slices in the skillet.

7Cover the skillet with a lid and cook until the egg whites are set but the yolks are still runny, about 3-4 minutes.

8Carefully transfer the egg-in-a-hole toast to a plate using a spatula.

9Garnish with fresh herbs and season with salt and pepper to taste before serving.
