Spicy Habanero Carrot Sauce

1.In a medium saucepan, heat the olive oil over medium heat.

2.Add the chopped onion and minced garlic to the saucepan. Sauté until the onion is translucent and the garlic is fragrant, about 5 minutes.

3.Add the chopped carrots to the saucepan and cook for another 5 minutes, stirring occasionally.

4.Add the habanero peppers to the saucepan and cook for an additional 2 minutes.

5.Pour in the white vinegar and water, then bring the mixture to a boil.

6.Reduce the heat to low and let the mixture simmer for 20 minutes, or until the carrots are tender.

7.Remove the saucepan from heat and let the mixture cool slightly.

8.Transfer the mixture to a blender and add the lime juice, salt, and black pepper.

9.Blend the mixture until smooth. If the sauce is too thick, add a little more water until the desired consistency is reached.

10.Taste and adjust seasoning if necessary.

11.Pour the sauce into sterilized jars or bottles and store in the refrigerator.
