Decadent Chocolate Birthday Pancakes

1.In a mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and baking soda.

2.In a separate bowl, whisk the egg, buttermilk, and vanilla extract together.

3.Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

4.Gently fold in the chocolate chips and sprinkles into the batter.

5.Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter.

6.Pour 1/4 cup of batter onto the pan for each pancake.

7.Cook until bubbles form on the surface of the pancake, then flip and cook for another minute until cooked through.
