Zesty Orange Jaggery Cake

1Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with ghee (½ cup).

2In a large mixing bowl, combine the wheat flour (2 cups), jaggery powder (1 cup), baking powder (1 teaspoon), and salt (½ teaspoon). Mix well to ensure there are no lumps.

3In another bowl, whisk together the ghee (½ cup) and yogurt (1 cup) until smooth and creamy.

4Add the fresh orange juice (1 cup) and orange zest to the ghee (½ cup) and yogurt (1 cup) mixture, and mix until well combined.

5Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

6Pour the batter into the prepared cake pan and smooth the top with a spatula.

7Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
