Savory Potato and Onion Bake

1Preheat your oven to 400°F (200°C).

2In a large mixing bowl, combine the sliced potatoes (4 medium) and onions (2 large). Drizzle with olive oil (2 tablespoons) and sprinkle with thyme, garlic powder (1 teaspoon), salt, and pepper. Toss until the potatoes (4 medium) and onions (2 large) are evenly coated.

3In a greased baking dish, layer half of the potato and onion mixture. If using cheese, sprinkle half of the grated cheese (1 cup) over this layer.

4Add the remaining potato and onion mixture on top, followed by the rest of the cheese if using.

5Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

6After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes (4 medium) are tender and the top is golden brown.

7Remove from the oven and let it cool for a few minutes before serving.
