Whimsical Cotton Candy Cookies

1Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2In a medium bowl, whisk together the flour, baking soda (1 teaspoon), and salt (½ teaspoon). Set aside.

3In a large mixing bowl, cream together the softened butter, granulated sugar (1 cup), and brown sugar (1 cup) until light and fluffy, about 3-4 minutes.

4Add the eggs (2 large) one at a time, mixing well after each addition. Then, stir in the vanilla extract (1 teaspoon) and cotton candy flavoring (½ teaspoon) until combined.

5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

6Gently fold in the chopped cotton candy (1 cup), white chocolate chips (1 cup), and rainbow sprinkles (½ cup) until evenly distributed throughout the dough.

7Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
