Spicy Onion Potato Pav

1Heat oil (2 tablespoons) in a pan over medium heat. Add mustard seeds (1 teaspoon) and cumin seeds (1 teaspoon), and let them splutter.

2Add the finely chopped onions (2 large) and green chilies (2) to the pan. Sauté until the onions (2 large) turn golden brown.

3Stir in the ginger-garlic paste (1 teaspoon) and cook for another minute until the raw smell disappears.

4Add the turmeric powder (½ teaspoon), red chili powder (1 teaspoon), and salt. Mix well and cook for 2 minutes.

5Add the boiled and mashed potatoes to the pan. Mix everything thoroughly and cook for another 5 minutes, allowing the flavors to meld together.

6Sprinkle garam masala (1 teaspoon) over the potato mixture and mix well. Remove from heat and set aside.

7In a separate pan, lightly toast the pav buns (8) on both sides until golden brown.

8To serve, take a pav bun, fill it with the spicy onion potato mixture, and garnish with fresh coriander leaves. Serve with lemon wedges on the side.
