Savory Fenugreek and Fennel Oat Patties

1In a large mixing bowl, combine the rolled oats (1 cup), chopped fenugreek leaves, (½ cup) crushed fennel seeds, (½ cup) and nutritional yeast (¼ cup).

2Add the turmeric powder (½ teaspoon), cumin powder (½ teaspoon), coriander powder (½ teaspoon), red chili powder (½ teaspoon), and salt to the mixture. Mix well to combine all the dry ingredients.

3Gradually add water to the mixture, stirring until a thick batter forms. The consistency should be thick enough to hold its shape when formed into patties.

4Let the mixture sit for about 15-20 minutes to allow the oats to absorb the moisture and soften.

5Heat a non-stick skillet over medium heat and add a little oil to coat the bottom.

6Once the oil is hot, take a portion of the mixture and shape it into a patty. Place it in the skillet and flatten it slightly with a spatula.

7Cook the patty for about 4-5 minutes on each side, or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.

8Once cooked, remove the patties from the skillet and place them on a paper towel to absorb excess oil.

9Serve the savory fenugreek and fennel oat patties warm with your favorite dipping sauce or chutney.
