Coconut Milk Cake with a Sweet Sugar Glaze

1Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

2In a large mixing bowl, cream together the softened butter and sugar (1 cup) until light and fluffy.

3Add the milk (1 cup) and vanilla extract (1 teaspoon) to the butter-sugar (1 cup) mixture and mix until well combined.

4In another bowl, whisk together the wheat flour (2 cups), baking powder (2 teaspoons), and salt (¼ teaspoon).

5Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6Fold in the shredded coconut (1 cup) until evenly distributed throughout the batter.

7Pour the batter into the prepared baking pan and smooth the top with a spatula.

8Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

9While the cake is baking, prepare the glaze by whisking together the powdered sugar (½ cup) and coconut milk (2 tablespoons) in a small bowl until smooth.

10Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

11Drizzle the coconut milk (2 tablespoons) glaze over the cooled cake before serving.
