Coconut Milk Cake with a Sweet Sugar Glaze

1Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

2In a large mixing bowl, combine the sugar (1 cup) and milk (1 cup). Whisk together until the sugar (1 cup) is fully dissolved.

3Add the shredded coconut (1 cup) to the sugar (1 cup) and milk (1 cup) mixture, stirring well to combine.

4In a separate bowl, sift together the wheat flour (2 cups) and baking powder (2 teaspoons).

5Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

6Pour the batter into the prepared baking pan, spreading it evenly.

7Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
