Savory Sweet Corn and Egg Fried Rice

1Heat the sesame oil (1 tablespoon) in a large skillet or wok over medium heat.

2Add the minced garlic (1 clove) and sauté for about 30 seconds until fragrant.

3Add the sweet corn to the skillet and cook for 2-3 minutes until heated through.

4Push the corn to one side of the skillet and crack the eggs (2 large) into the empty side. Scramble the eggs (2 large) until fully cooked, then mix them with the corn.

5Add the cooked rice (2 cups) to the skillet, breaking up any clumps. Stir everything together until well combined.

6Pour the soy sauce (2 tablespoons) over the rice mixture and stir to evenly coat. Cook for an additional 2-3 minutes, allowing the rice to get slightly crispy.

7Season with salt and pepper to taste, and stir in the chopped green onions (2) just before serving.
