Pepperoni and Pepperjack Cheese Pancake Biscuit Bake

1Preheat your oven to 375°F (190°C).

2In a large mixing bowl, combine the pancake mix (2 cups) and eggs (2 large). Stir until well blended and smooth. If the batter is too thick, you can add a little water to reach your desired consistency.

3Fold in the shredded pepperjack cheese (1 cup) and sliced pepperoni (1 cup) into the pancake batter until evenly distributed.

4Open the can of biscuit dough and separate the biscuits. Flatten each biscuit slightly with your hands or a rolling pin.

5In a greased 9x13 inch baking dish, arrange the flattened biscuit dough at the bottom, covering the entire surface.

6Pour the pancake batter mixture over the biscuit layer, spreading it evenly with a spatula.

7Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

8Once baked, remove from the oven and let it cool for a few minutes before slicing into squares. Serve warm.
