Savory Chicken and Grain Medley

1Rinse the rice (1 cup) and buckwheat (1 cup) under cold water until the water runs clear. Drain and set aside.

2In a large pot, heat the olive oil (2 tablespoons) over medium heat. Add the chopped onion (1) and sauté until translucent, about 3-4 minutes.

3Add the sliced sausages (4) to the pot and cook until browned, about 5 minutes.

4Stir in the chicken drumsticks (4) and sear on all sides until golden brown, about 5-7 minutes.

5Sprinkle the garlic powder (1 teaspoon), paprika (1 teaspoon), salt, and pepper over the chicken and mix well.

6Add the rinsed rice (1 cup) and buckwheat (1 cup) to the pot, stirring to combine with the sausage and chicken mixture.

7Pour in the chicken broth (2 cups) and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.

8After 20 minutes, add the shredded cabbage (2 cups) and diced cucumbers (2) to the pot. Stir gently to combine.

9Cover the pot again and cook for an additional 10 minutes, or until the grains are tender and the chicken is cooked through.

10Remove from heat and let it sit covered for 5 minutes before serving. Fluff the grains with a fork and serve hot.
