Avocado Delight Cookies

1Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2In a large mixing bowl, mash the ripe avocado (1) until smooth. Add the softened butter, brown sugar (1 cup), and granulated sugar (½ cup), and mix until well combined.

3Beat in the egg (1 large) and vanilla extract (1 teaspoon) until the mixture is smooth and creamy.

4In a separate bowl, whisk together the all-purpose flour (2 cups), baking soda (1 teaspoon), baking powder (½ teaspoon), and salt (¼ teaspoon).

5Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

6Fold in the chocolate chips (1 cup) and chopped nuts (if using) until evenly distributed throughout the dough.

7Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

8Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
